French Vanilla Mousse

French Vanilla Mousse
With the theme of this week’s Sweet Thursday event being summer desserts, I decided to make something cool and creamy. This recipe was originally for chocolate mousse, but I decided to try it in vanilla first, because I just love vanilla during the summer time. It was also my idea to add Nila wafers as a garnish, and in my opinion they were a perfect choice!  This mousse was very yummy, very fluffy, and VERY sweet!
I think this would definitely be good using a number of flavors. (Chocolate is definitely at the top of my list to try next!)  And I also think this would be a great recipe to add bananas to, for a fluffy banana pudding, or you may even consider adding other fruits like strawberry (perhaps layered together with pound cake for a lovely trifle….yum!)
So anyway, in case you can’t tell, I definitely would recommend this recipe to you, not just because it was so delicious, but also because there’s so much you can do with it!
French Vanilla Mousse Prep
Recipe for French Vanilla Mousse
Ingredients:
1 (14 oz.) can Sweetened Condensed Milk
1 cup cold water
1 (4-serving size) package French vanilla instant pudding mix
1 (8 oz.) container frozen light whipped topping, thawed
Nila Wafers (or other cookies to garnish with)
Directions: Whisk sweetened condensed milk and water in large bowl. Add pudding mix. Whisk 2 minutes or until well blended. Chill 5 minutes.  Fold in whipped topping. Spoon into serving dishes. Chill. Garnish as desired. (I layered with Nila wafers.)

It’s An Ice Cream Social!

Don’t you just love the blogosphere? One minute you’re at a recipe party, and the next minute your at a craft party! And this weekend we can all go to an Ice Cream Social over at Kitchen Bouquet! With my husband on a no-dessert diet, and me busy with projects in the house this week, I didn’t get a chance to make anything, so I’ll be highlighting a few things that I found on some of my favorite sites instead!  Hope you enjoy!

Friday Favorites – Week 21

Hello everyone! Welcome to Friday Favorites!
I’ve been working outside the home this week, and by outside, I literally mean outside! I’ve been going through boxes in our outbuilding, which is a job and a half! Basically I’m opening up a bunch of boxes that were packed 10 or even 15 years ago (and many not packed by me). And I’m reboxing, labeling, and reorganizing, and also setting some aside for a yardsale. Sounds fun, huh? Especially in the hundred degree heat! And then my mom has brought a ton of addtional stuff over for us to sale at our yardsale, so right now our building looks totally wrecked! Hopefully when we’re all done, I can take some photos, and it will make for a great blog post! So I guess you could say I’ve been doing some blog field work!
So anyway, because of that, I’ve spent very little time on the computer this week, but despite this, I still managed to visit all your posts this week, so yay! And I’ve also added a couple of giveaways for you, so all in all, I guess it wasn’t such a bad week for me in the blog world!

Szechuan Sweet & Sour BBQ Chicken (& Lawry’s Giveaway)

I don’t know anyone who doesn’t love summer grilling season!  Where I live, every weekend there’s some grilling going on in our neighborhood.  I know because we can smell it from our front porch!  Now Lawry’s is making the summer grilling season even more exciting with their new marinades.  Flavors include:

Recently I got to try two of Lawry’s newest flavors: Szechuan Sweet & Sour BBQ and Tuscan Sun Dried Tomato. Not only are these marinades delicious, but they have a very unique taste.
I was very excited to serve the Szechuan Sweet & Sour BBQ Chicken to my husband last week. I’ve never made any chicken quite like this, and it was very well received. The marinade features a Chinese five spice blend, ginger, sesame oil, and red pepper. Just imagine the best sweet and sour chicken from your favorite local Chinese joint and then add a spicy kick and your back yard grill! The result is yummy!
As you can see from the photos, I served our chicken over a bed of Asian style rice and vegetables. This was perfect for a quick and inexpensive gourmet meal.  And I love that these are 30 minute marinades, so I don’t have to worry about doing the marinading the day before.  (Perfect if you sometimes have to throw something together at the last minute!)
I’m very excited to be trying the Tuscan Sun-Dried Tomato next and will be posting the food as soon I’ve made it. For this purpses of this post, I’ve gotten a taste of the marinade already. It’s an oil and vinegar based marinade, infused with sun-dried tomatoes, sweet red peppers, and a blend of herbs and spices, including rosemary and oregano. Yum! I’ll let you know how it turns out on food, but I can already tell you, if the taste of the marinade alone is any indication of how it will be on cooked meat, we are in for another super-delicious meal!

Summer Star Garland

You may remember the Easter Garland I posted on back in March.  I actually kept it up through spring, and then finally I decided I needed something new for summer.  So the other day I used the same concept behind the Easter Garland and made some star garland for the summer. 
I would have liked to have done this in red, white, and blue, but I didn’t have any  coordinating papers that I liked together, and I’ve decided I need to use some of the supplies I already have rather than going out and buying new stuff all the time, so I went with a red, green, and blue color scheme.

What You’ll Need:
Scrapbook paper
Ribbon
Scissors
Tape
Cookie Cutters
Pencil/Pen
Garland Tutorial:
-Use cookie cutters or stencils to trace shapes onto the back of scrapbook paper. You can use a single shape or multiple shapes. (I used 3 different size stars, and I used 4 different paper designs.)
-Next take your scissors and cut out the shapes. (I made 24 cut outs for a seven and a half foot string of garland last time and this time.)
-Cut off a line of ribbon. Make the ribbon as long as you like. I suggest cutting off at least a foot more than the intended length. (I made a 7 1/2 foot garland, but I actually cut about 8 1/2 foot of ribbon off. I used the extra length on each end to wrap it around the “edging” on the top of the cabinets.)
-Now attach the shapes to the ribbon. (I placed them about an inch to an inch and a half apart from each other.)
-There are a few different methods you can use for this. Liz from Hoosier Homemade  actually sewed the cutouts to the ribbon. I, however, am not a seamstress and decided to use a short cut method. I used tape to attach the shapes. I used two small pieces of tape on each shape (making a t or x with the tape on the back of each shape.) I used two pieces to make sure it was secured, and put them on there cross-ways so that the garland would be more flexible/movable. For this step you could also mod podge or a glue gun if you prefer. (I just used tape because it’s quicker, there’s no mess, and it would allow me to make adjustments if I needed to.)
-Then hang your garland and enjoy!

Taco Salad

One of my favorite meals to eat at home is tacos.  I just go the easy route and purchase a taco kit.  Sometimes I get Taco Bell brand, and other times I get Old El Paso.  But I also buy taco seasoning alone for potential new recipes I may find, and I almost always keep corn chips on hand, which makes taco salad a very convenient meal for us.
The taco salad pictured here today was actually put together by my husband.  Hubby doesn’t cook at all.  Sometimes when I’m not feeling well, he’ll put together some tuna salad or something like that for us. But I’ve never seen him make an actual recipe.  But he did wait tables for several years, some of which was at a real upscale place, and he discovered he had a natural talent for plate presentations.  In fact, at one of the resturants where he worked, he put together a lot of the plates for their menu photos.
So the other day when we had taco salad, I decided to take a couple of pics of his handy work.  We started with Blue Tortilla Chips. (We usually get white, but we were shopping at Aldi, and they didn’t have white.)  Next came the meat mixuture, followed by lettuce, salsa, cheese, and finally sour cream. Yum!

Making a Taco Salad Buffet – By the way, if you’re ever having a lot of of people over for dinner, a taco salad buffet would be perfect choice. It’s fast, convenient, and fairly cheap compared to other meal choices.  And I never met anyone who didn’t like Mexican food, so it’s sure to be loved by all!  All you’d really have to cook is your meat and some refried beans.  And then you’d just have to prepare some toppings for the buffet, such as lettuce, tomatoes, mushrooms, peppers, cheese, and condiments.  Very easy!

Happy 4th of July!

I want to wish everyone a 4th of July! Since I’ve started this blog, I’ve made it a tradition to post some of my favorite Revolutionary quotes, along with the music video “Freedom Never Cries” by Five For Fighting. The concept of the song is brilliant and thought provoking, and the video is so touching.  Hope you enjoy it as much as I do.
